Thin Mint Brownies

“The perfect combo of Mint and Chocolate! Fudgy brownies layered with sweet mint frosting and creamy chocolate ganache.”

Ingredients:
Brownie layer
Ghirardelli brownie mix (plus ingredients on box -egg, oil, water)
8-10 thin mint cookies, chopped
or mint Oreos as a substitute
Frosting layer
1/4 c butter, softened
2 Tablespoons heavy whipping cream
2 cups powdered sugar
1 teaspoon peppermint extract
1-2 drops of green food coloring
Ganache layer
1 c semi sweet chocolate chips
6 T Butter

Instructions:
For brownie layer:
Make brownie mix according to package. (Optional -add in chopped mint cookies)
Pour into a lined 9×9-inch pan
Bake according to package directions
and let cool for about an hour.

For mint frosting layer:
Beat together the butter, powdered sugar, cream, peppermint extract, and green food coloring until fluffy. Spread mint frosting over cooled brownies with a spatula. Refrigerate for 1 hour
For chocolate ganache layer:
In a microwave-safe bowl, add butter and chocolate chips. Microwave for 30 seconds.
Stir and microwave an additional 30 seconds, if needed, until smooth.
Pour over mint frosting and spread evenly. Add some crushed cookies on top if desired.
Chill 1 hour before cutting and keep chilled until ready to serve! Enjoy!
